HERBED CREAM CHEESE BITES

Herbed Cream Cheese

WHY WE LOVE THIS

✔️ Low-Carb (Save the carbs for the roast potatoes!)

✔️ Easy to make

✔️ Great for kids and adults

✔️ Crowd Favourite

✔️ Vegetarian

INGREDIENTS

  • Cream Cheese (Any Kind - Low Fat for healthier option)
  • Mix of herbs - Make it slightly herby or super herby (Suggestion: basil, sage, oregano and a little bit of chives)
  • Cucumber

METHOD

  • Mix Cream Cheese and Chopped Herbs in a bowl.
  • Slice Cucumber to mimic your usual crackers 
  • Place a dollop of the Cream Cheese mixture on the Cucumber Slice.

SATAY BEEF SKEWERS

Beef Satay Skewers

WHY WE LOVE THIS

✔️ Serve as an appetiser or part of the main

INGREDIENTS

  • 1 pound skirt steak cut in 1 inch strips
  • 2 tablespoons lemon juice
  • 2 tablespoons fresh ginger grated
  • 2 tablespoons low sodium soy sauce
  • 2 cloves garlic grated
  • 1 tablespoon chili paste such as Gourmet Garden
  • 1 teaspoon fish sauce
  • in wooden skewers soaked in water
  • scallions (optional garnish)

Dipping Sauce

  • 4 tablespoons creamy natural peanut butter
  • 1 tablespoon soy sauce
  • 1 tablespoon lemon juice
  • 1 teaspoon fish sauce
  • 1 teaspoon chili paste more or less to taste
  • warm water

METHOD

  • In a medium glass bowl, whisk together beef marinade: lemon juice, ginger, soy sauce, fish sauce, garlic and chili paste. Add beef strips to the bowl and toss well to coat. Let sit at room temperature for 20-30 minutes or marinate in the refrigerator for up to overnight.
  • Prepare peanut dipping sauce by whisking together all ingredients in a small bowl. Slowly add in warm tap water, about a tablespoon at a time, until you reach desired consistency. Reserve for later.
  • To cook beef skewers, carefully thread each strip on soaked skewers. Grill over medium-high heat for 2-3 minutes per side for medium rare.
  • Let skewers rest for 10 minutes before serving with reserved peanut dipping sauce.

SWEET POTATO & FETA ROLLS

SWEET POTATO ROLLS

INGREDIENTS

  • 1kg sweet potato, peeled, cut into 2cm-pieces
  • 1 brown onion, finely chopped
  • 55g (1/2 cup) walnuts
  • 200g smooth feta, crumbled
  • 1/2 teaspoon finely chopped fresh rosemary
  • Pinch of ground cinnamon
  • 2 sheets frozen puff pastry, just thawed
  • 1 egg, lightly whisked
  • 1 1/2 tablespoons sesame seeds
  • Greek yoghurt, to serve

METHOD

  • Preheat oven to 180C/160C fan forced. Line 2 baking trays with baking paper.
  • Arrange the sweet potato and onion, separately, on the prepared trays. Bake for 30-40 minutes or until softened, removing onion earlier if cooked. Set aside to cool.
  • Meanwhile, roast the walnuts on a small baking tray in the oven for 5 minutes or until toasted. Set aside to cool. Chop the walnuts.
  • Increase oven to 200C/180C fan forced. Place the sweet potato in a large bowl and use a fork to lightly crush. Add the onion, feta, walnut, rosemary and cinnamon. Season. Use your hands to mix until evenly combined.
  • Cut each sheet of pastry in half. Place one quarter of the sweet potato mixture in a log shape along one long edge. Brush the opposite long edge with egg. Roll up to enclose. Cut each roll into 3 pieces and place seam-side down on the prepared trays. Repeat with the remaining sweet potato mixture and pastry.
  • Brush pastry with egg and sprinkle with sesame seeds. Bake for 25 minutes or until golden brown. Serve with yoghurt.

Chocolate Peanut Butter Chia Bars

WHY WE LOVE THIS

✔️ Quick & Easy (Should take less than 15 mins from start to finish)

✔️ Dairy-Free

✔️ Natural Ingredients

✔️ Protein Boost

INGREDIENTS

  • 1 cup pitted, whole dates (about 12-13)
  • 1/4 cup plus 1 tbsp peanut butter (I used creamy*)
  • 1/4 cup peanuts
  • 2 tbsp unsweetened cocoa powder
  • 1 1/2 tbsp chia seeds

METHOD

  • Add all ingredients to food processor and process until the ingredients break down and become a mostly cohesive mixture. You will still have little pieces of peanuts remaining, and the consistency of the mixture should hold together when you press it together.
  • Line a rimmed dish with parchment paper and press mixture into it, leaving your desired thickness. I used only about half of an 8" x 8" baking dish as I didn't have a smaller dish available.
  • Refrigerate for at least 45 minutes before slicing. Store bars in the refrigerator.

Paleo Ginger Snap Cookies

INGREDIENTS

  • 1/4 cup Golden Barrel Coconut Oil - melted
  • 3/4 cup Coconut Sugar
  • 3 tbsp Blackstrap Molasses
  • 1 egg
  • 1 1/2 cups Almsot Flour
  • 6 tbsp Coconut Flour
  • 1 1/2 tsp Ground Ginger
  • 1/2 tsp Salt
  • 1 tsp Baking Soda

METHOD

  • Preheat oven to 350° and line a cookie sheet with parchment paper.
  • In a large bowl, combine coconut oil, sugar, molasses and egg.
  • Add in the almond flour, coconut flour, ginger, salt, and baking soda. Stir until completely mixed. Scoop into 2 tablespoon balls and roll in additional coconut sugar.
  • Place 1-2 inches apart on the cookie sheet and bake for 12 minutes.
  • Remove them from the oven and gently press down so they are slightly flattened.
  • Return to oven for 3 more minutes.
  • Let cool on the cookie sheet for a few minutes before transferring them to a cooling rack.
